Bringing Barbados to you…

Are you missing The Beach Club and its exquiste menu? Well you’re in luck, as we continue to share our favourite recipes with you all; why not give cooking fine Bajan cuisine from the comfort of your own home a go?

This week’s recipe is the delicious Blackened Tuna, Mashed Potato & a Medley of Veg with Spicy Tomato Salsa for 2..

What you’ll need –

2 5oz Tuna (Size doesn’t matter)
1 cup of Blackened redfish spice
8 tablespoons of regular plain Flour
4 tablespoons of Olive Oil
8 Large Potatoes
12 tablespoons (Elle & Vire) Cooking Cream (or Regular Cooking Cream)

Salsa –
4 Tomatoes
4 tablespoons of Olive Oil
2 teaspoons of Lemongrass
2 tablespoons of Chives
2 teaspoons of Parsley
2 teaspoons of Scotch Bonnet
1 tablespoon Lemon Juice
2 Pinches of salt and pepper

Vegetables –
8 pieces of Broccoli
8 pieces of Cauliflower
16 green Beans
16 pieces of Carrots
8 pieces of Fennel

How to make the dish – 

Firstly add you Blackened redfish spice and flour together in a bowl and marinate your Tuna for 30 minutes. Whilst your fish is marinating, add olive oil to a nonstick pan and add olive oil. Now let’s move onto your potatoes and vegetables. Peel and cut your potatoes into small pieces, they don’t have to be perfect as we will go on to these later on, bring them up to the boil for roughly 10-minutes.

For your vegetables use a small saucepan with roughly 4 cups of par boiled water. Cook your veg for 5 minutes for an andante finish, if you prefer your veg a little softer then leave them to boil for 10-15 minutes max.

Now that your fish has been marinated, place the tuna steaks into your preheated pan. For a medium rare finish, cook your fish for 3-4 minutes turning it over half way through. However remember that you’re cooking from home and therefore this may require a little longer, we recommend checking the fish before removing it from the heat. Once you are happy, place your fish off the heat to rest and check on your potatoes and veg. Once your potatoes are boiled, mash them together using unsalted butter and the cooking cream.

To create your accompanying salsa, cut tomatoes into four pieces taking out the seeds and dice the four pieces into fine chunks. Add in your olive oil, lemongrass, chives or parsley and (scotch bonnet and lemon juice) or any spice of your choice; mix it all together with a pinch of salt and pepper to taste.

Finally, plate up your dish using our photo as guidance. Start with your mash, then add your vegetables, placing your sliced tuna steak on top neatly, your salsa can then be added on top or used as a side garnish; lastly finishing the dish with a drizzle of olive oil and microgreens (optional).
